  2. Make the egg mixture: Separate the egg yolks and whites. Beat the yolks with sugar until pale and fluffy.
  3. Add the mascarpone: Gently fold the mascarpone into the egg yolk mixture until smooth.
  4. Whip the whites: Beat the egg whites until stiff peaks form and gently fold them into the mascarpone mixture.
  5. Assembly: Quickly dip the savoiardi biscuits in the coffee and arrange them in the base of the dish. Cover with the mascarpone cream.
  6. Finishing: Repeat the layers and dust generously with cocoa powder. Refrigerate for at least 4 hours.
